Our Roasted Cauliflower Mac & Cheese is almost certainly not the mac & cheese you grew up eating. But we’re confident that it stacks up better for both flavor and nutrition. Skeptical? That’s fair. Plenty of customers and even the Registered Dietitians we work with were doubtful until they tried it.

So what exactly sets our Mac & Cheese apart from others? Ours is a much more energizing, fiber-filled recipe compared to the original. Brown Rice Pasta

We’ve selected brown rice pasta as our macaroni of choice because it’s naturally gluten-free, a source of iron, and it delivers an ample 55g of whole grain content.  It also has a nice, slightly nutty flavor that complements the other ingredients. Typically, you’ll find that most prepared mac & cheese dishes use wheat-based pasta, offering minimal to no fiber. It’s quite rare to come across a mac & cheese at your local grocer that’s Whole Grain Stamp Certified like ours is.


This cruciferous vegetable is rich in antioxidants, protein, riboflavin, and vitamins C and K. According to the Journal of the American Diabetic Association, many studies indicate a link between eating cruciferous vegetables and protection against cancer. 

Butternut Squash

We use butternut squash to give a hint of natural sweetness and enhance the creamy texture of our Mac & Cheese. This variety of squash contains carotenoids which are necessary for good eye health. Combined with cauliflower, butternut squash rounds out this meal with a complete serving of vegetables.

Controlled Sodium

We like to rely on real, whole food ingredients to give our meals flavor as opposed to overseasoning with salt. Even Registered Dietitians give our Mac & Cheese a nod of approval because it contains a modest 380 mg of sodium. The Dietary Guidelines for Americans recommends limiting sodium intake to less than 2300mg per day.


We use a mix of Cheddar and Monterey Jack cheese in our recipe, for a rich, creamy flavor that makes this one of our all-time most popular products. Cheese is rich in protein and calcium and contains phosphorus, zinc, and vitamins A and B12.
